Avocado Hummus and Cucumber Pico de Gallo Tostadas

Ingredients
FOR THE AVOCADO HUMMUS
  • 1/2TEASPOON CUMIN
  • 1/2TEASPOON SALT
  • 15-20SPRIGS CILANTRO
  • 1CAN CHICKPEAS DRAINED AND RINSED
  • 2AVOCADOS
  • 2GARLIC CLOVES
  • 2TABLESPOONS LIME JUICE (APPROX. 1 LIME)
  • 2TABLESPOONS OLIVE OIL
  • FRESHLY GROUND PEPPER
  • SPLASH OF WATER

FOR THE CUCUMBER PICO
  • 1/2CUCUMBER
  • 1/2JALAPEƑO
  • 1/4ONION
  • 1/4TEASPOON SALT
  • 1TABLESPOON LIME JUICE (APPROX. ½ LIME)
  • 1TOMATO
  • 8-10SPRIGS CILANTRO

ADDITIONAL INGREDIENTS
  • 8-10TOSTADAS  
  • CILANTRO FOR GARNISH
  • HOT SAUCE OF YOUR CHOICE
  • MEXICAN

Avocado Hummus and Cucumber Pico de Gallo Tostadas

Directions
  1. Drain and rinse a can of chickpeas.
  2. Add chickpeas to a blender or food processor along with the flesh of 2 avocados, 2 garlic cloves, 2 tablespoons lime juice, 15-20 sprigs cilantro (rinsed and bottoms twisted off), 1/2 teaspoon cumin, 1/2 teaspoon salt, freshly ground pepper, and 2 tablespoons of olive oil, Add a splash of water to the blender and blend until combined well. Taste for seasoning.
