CHICKEN TOSTADAS

Chicken Tostadas - A quick and easy Mexican dinner! A crispy corn tortilla piled high with guacamole, chicken and salsa. Take a shortcut from the store and this can be ready in no time!

INGREDIENTS
PICO DE GALLO
  • 1 cup tomato, chopped
  • 1 Tbls chopped cilantro
  • 1 Tbls lime juice
  • 1/2 jalapeno, seeded and chopped
  • 1/4 tsp salt
  • 2 Tbls onion, finely chopped

CHICKEN
  • 1 Tbls lime juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 boneless, skinless chicken breasts
  • 2 tsp chili powder
  • 2 tsp garlic powder
  • 2 tsp ground cumin
  • 2 tsp onion powder
  • 2 tsp paprika

TOSTADAS
  • 8 corn tostada shells
  • Guacamole

INSTRUCTIONS
  1. Preheat oven to 350 degrees.
  2. Sprinkle both sides of chicken with all the seasonings except the lime and paprika. Bake for 20-25 minutes, or until chicken is cooked through.
