KETO SPAGHETTI SQUASH CHICKEN ALFREDO

Ingredients:

  • 1- whole Spaghetti Squash
  • 2- chicken Breast
  • 2-cups Broccoli
  • 1- cup cream cheese (reduced fat)
  • 1/2-cup cream(Thin with a little water if the mixture is too thick)
  • 1/2-cup parmesan cheese (low fat)
  • 1-cup mozzarella cheese
  • 2-tablespoons butter
  • Olive oil for squash
  • Garlic powder, Salt and Pepper to taste

Directions:

  1. Start by cutting squash in half and be careful it’s hard to cut. Sprinkle with olive oil and use salt and pepper to taste. Turn squash upside down on backing sheet to create steam and even cooking, place in oven at 375 for 30 minutes
  2. Cut chicken breast length wise, season and bake at 375 for 20 minutes ( careful not to dry out). The  chicken can be cooked the same time as the squash (how easy is that).
