Best Keto Antipasto Salad

Ingredients

  • 1/2 pkg sliced pepperoni
  • 1 small bottle zesty Italian dressing
  • 1 cup shredded Parmesan
  • 3 Tbsp Italian seasoning
  • to taste Salt & black pepper
  • 1 bunch fresh basil thin sliced
  • 2 small zucchini, halved and thin sliced
  • 2 small yellow squash, halved and thin sliced
  • 8 ounce button mushrooms, quartered
  • 1 pint cherry tomatoes, halved
  • 1/2 red onion, halved and thin sliced
  • 1 lb asparagus, cut into bites size pieces
  • 1 cup Spanish olives, drained
  • 1 can medium black olives, drained
  • 1 can artichokes, drained and quartered
  • 8 oz fresh mozzarella small balls, drained
  • 1 pkg hard salami, thin sliced

Instructions

  1. Prepare vegetables and put in large bowl.
  2. Drain canned vegetables and add to bowl.  
  3. Add all other ingredients and stir to mix.  
  4. Refrigerate until ready to serve. Can be made the night before. Enjoy
