KETO SHEET PAN BACON WRAPPED BBQ PORK TENDERLOIN

INGREDIENTS:

  • 1 teaspoon onion powder 
  • Pink salt
  • Freshly cracked black pepper
  • 1/2 cup sugar-free BBQ Sauce
  • 1 (2-pound) pork tenderloin (or 2 1-pound+)
  • 1/2 pound thin sliced bacon, how much you use will depend on the size of your tenderloin(s)
  • 1/4 cup low-carb BBQ Rub
  • 1 large head cauliflower, cut into florets
  • 3 tablespoons olive oil, divided
  • 1 teaspoon garlic powder

INSTRUCTIONS

  1. Rub the tenderloin with the BBQ rub, making sure to coat it well. Set aside and allow it to marinate at room temperature for 15 minutes to 1 hour.
  2. Preheat the oven 400 F.
  3. In a large bowl, toss the cauliflower with 2 tablespoons olive oil, garlic powder, onion powder, salt, and pepper.
  4. Grease the sheet pan with the remaining 1 tablespoon of olive oil.
  5. Scatter the cauliflower over the sheet pan in an even layer, leaving room for the tenderloin(s).
