Keto/Low Carb sour cream smothered chicken

INGREDIENTS

  • 1 cup chicken stock
  • 1 cup sour cream
  • 1/3 cup shredded mozzarella cheese
  • 6 green onions, sliced
  • 6 slices bacon, cooked crisp and crumbled
  • 4 tablespoons butter, divided
  • 4 tablespoons olive oil, divided
  • 1 medium onion, thinly sliced
  • 8 ounces mushrooms, sliced
  • 2 cloves garlic, minced
  • sea salt and black pepper, to taste
  • 1 1/2 pounds chicken breasts (4 total)

INSTRUCTIONS

  1. Heat 2 tablespoons of olive oil and 2 tablespoons of butter in a large sauté pan, over medium heat. Once the pan is heated, add the onion, mushrooms, garlic, salt and pepper. Sauté until the mushrooms and onions are nice and caramelized, about 20 minutes.
