Vegan Keto Spinach Pie

Low carb vegan spinach pie sounds like something Popeye would endorse wholeheartedly. This low carb vegan spinach "quiche" is gluten free, nut free, egg free, dairy free and totally keto-friendly!

Ingredients
For the Crust
  • 2 tbsp (10g) psyllium husk
  • 1/2 cup (112g) coconut oil
  • 1/2 cup (120ml) warm water
  • 1/4 tsp salt
  • 3/4 cup (75g) coconut flour

For the Filling
  • 1 block (14oz/ 397g) extra firm tofu
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 cup (30g) nutritional yeast
  • 1/4 cup (60ml) olive oil
  • 1/4 tsp cayenne powder
  • 2 cups frozen spinach (170g), thawed and drained
  • pepper, to taste

Instructions
  1. Preheat oven to 350F (177C).
  2. Thaw the frozen spinach in a bowl with the chopped artichoke hearts. Press down on the mixture and drain any resulting liquid.
