0 Net Carb-Low Carb Sugar Free Meringue Cookies

Ingredients

  • 3 large egg whites at room temperature
  • 1/2 cup erythritol
  • 3/4 cup powdered erythritol
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 200 degrees F
  2. Line a baking sheet with a non stick silicone mat or greased parchment paper. I find the silicone mat works the best.
  3. In a medium bowl with hand mixer add egg whites and beat on medium low speed for 1 minutes. Egg whites should be white and frothy.
  4. Continue mixing at medium speed add 1 Tablespoon of erythritol at a time, after all of the erythritol add 1 Tablespoon of powdered erythritol at a time, continue whisking together until stiff peaks form. Batter should be glossy and smooth.Stir in vanilla extract.
  5. Spoon meringue batter into mounds on prepared baking sheet or spoon into a piping bag and pipe into little mounds.
