  • 1 pound chicken thighs (skin on)
  • Salt and pepper to taste
  • 3 Tablespoons ghee (or clarified butter)

  1. Debone chicken thighs and place on a cutting board. Cover with a piece of wax or parchment paper.
  2. Using a rolling pin or meat tenderizer, flatten the chicken as thinly as possible.
  3. Season to taste.
  4. Add the ghee to a frying pan over medium heat.
  5. Once pan and ghee are hot, add flattened chicken things. Cook on each side 3-5 minutes until golden and cooked through (165°F).
