Keto Thai Larb Rolls


  • 16 large butter lettuce leaves
  • 1/4 cup mint leaves
  • 1/4 cup cilantro leaves
  • 1 tablespoon sesame oil
  • 2 pounds ground chicken
  • 1 piece fresh lemongrass about 5 to 6 inches
  • 6 kaffir lime leaves
  • 1/4 cup fish sauce (gluten-free)
  • 1/4 cup fresh lime juice
  • 2 tablespoons chili garlic sauce
  • 1 cups chopped scallions

  1. Finely mince the lemongrass and kaffir lime leaves. Then chop the scallions.
  2. Place a large skillet over medium heat. Add the sesame oil and ground chicken. Brown for 5 minutes, breaking into small pieces with a wooden spoon.
  3. Add the lemongrass and kaffir lime leaves. Cook another 1-2 minutes then turn off the heat.
  4. Mix in the fish sauce, lime juice, chili garlic sauce, and scallions.
