Keto/Low Carb Thick and Soft Snickerdoodle Cookies

Ingredients

  • 1/2 tsp baking powder
  • 1/2 tsp cream of tartar
  • 2 tsp vanilla extract
  • 1 1/3 cup almond flour
  • 1/4 cup coconut flour
  • 1/3 cup Erythritol
  • 1 large egg
  • 1/4 cup butter softened
  • 1/4 cup cream cheese room temperature
  • 1/2 tsp salt

Cinnamon Sugar Coating

  • 2 tbsp Erythritol
  • 2 tsp cinnamon

Instructions

  1. Preheat oven to 350°F/180°C and line a baking tray with parchment paper or silicone baking mats. Set aside.
  2. In a medium bowl combine the dry ingredients: coconut flour, almond flour, salt, baking powder, cream of tartar. Set aside.
