  • Cabbage, chopped
  • Mushrooms, chopped 
  • 2 Eggs
  • 100g/3.5 ounces Feta
  • 1 Cup Grated Cheese 
  • Butter or Coconut Oil, for cooking
  • Salt & Pepper, to taste

Mushroom & Cabbage Casserole

  1. Preheat the oven to 180C/350F and get out a baking dish. 
  2. In a frying pan, melt butter and then add the chopped cabbage, mushrooms, salt and pepper, to taste. 
  3. Cook until the vegetables have softened.
  4. Whisk together the eggs, feta and half of the grated cheese. 
  5. Once the vegetables have softened, move them to the prepared baking dish.
  6. Mix through the egg and cheese sauce until well combined. 
  7. Top with the other half of the cheese, or more to cover. 
  8. Place into the preheated oven for 25 to 30 minutes, or until the cheese is golden and crispy to your liking.
